Ever have a night that you don’t feel much like cooking or one where you had a late/big lunch and aren’t really hungry or even a night where you’re too busy to even think about dinner until right the moment you should be eating it? I know that happens at our house. Enter Snacky Dinner! We don’t resort to this too often which is what makes it a wonderful treat and helps it keep the magic.
What is Snacky Dinner? It’s pretty much what it sounds like, snacks for dinner!
What do you serve? Whatever you want that is quick and easy. Our menu usually includes something like the following:
- Cheese Slices
- Carrot Sticks
- Celery with Homemade Peanut Butter or Cream Cheese for Stuffing
- Green Pepper Slices
- Popcorn with a touch of coconut oil instead of butter
- Crackers or Pretzels
- Pepper Jelly
So you’re probably thinking “That sounds great but my kid wouldn’t touch most of that menu with a 10′ pole!” That’s the beauty of it, neither would the majority of our kids -the oldest is odd and asks for peas over cupcakes and kale instead of ice cream but that’s a whole other post; yet, as soon as I call it Snacky Dinner all of these foods become their favorites. I mean I can’t cut carrots and celery fast enough. It’s awesome! So what are you waiting for?!?
